Nestled away on east London’s Hoxton Street sits Monty’s Deli, an American-influenced deli serving Jewish classics, founded by Mark Ogus and Owen Barrett.

First set up under a railway arch in south London and named after Ogus’s grandfather, Monty’s is dedicated to refining the perfect pastrami and salt beef for their special versions of the Reuben, a classic deli sandwich of mythical origins.

For the latest episode of Chapters of Food, director Joe Ridout, known for his films for i-D and Topman, heads to the London hotspot where Ogus and Barrett give a step-by-step guide to Monty's acclaimed Reuben, which includes their own ten-day-cured meat, two-week prepared sauerkraut, Russian dressing, Emmental cheese, and rye bread.
