American food brand Sweetgreen—which since 2007 has been a destination for simple, seasonal, healthy food backed by a transparent and ethical supply network—has collaborated with chef Dan Barber and vegetable breeder Michael Mazourek, who head up innovative seed enterprise Row 7, to think differently about the origin of flavor. The result is the first-ever seed-to-Sweetgreen experience: a Row 7 squash bred explicitly for its flavor, which will appear exclusively on Sweetgreen menus from 1 November.
In this film—directed by Andrew David Watson—we witness the process and development of the Row 7 squash—whose official name is Robin's Koginut—and meet the people and places that make up its ethical, community and environment-driven supply chain. 100,000 seeds and six farms were involved in the development of this re-imagined squash, taking us from California to Illinois and back to New York.
