An umbrella term for a number of recipes known for their complexity of composition and flavor, mole and its origins have reached mythical status, with numerous regions claiming ownership, numerous legends around its invention and countless incarnations of the rich recipe.
Inspired by the work of Spanish filmmaker and Mexico City habitué Luis Buñuel, Anastacio’s energetic dreamscape captures the passion felt for the muddy dish through the eyes of Mexican chef Enrique Olvera.
